Kitchen accessories, for the post-narrow kitchen. The blades of the Hibana 800DP series impress not only with their striking damask pattern, which comes from 42 layers of steel, but also with their hardness of approximately 61 HRC. The knife is sharpened using the traditional Honbazuke method on both sides of the blade. The traditionally curved handle of the Miyabi 800DP Hibana knives allows for fatigue-free work with all cutting techniques, and the perfectly balanced blade and handle make every job easy for the user. The Gyutoh knife from the Miyabi 800 DP series, thanks to its thin yet stable blade, allows for a completely controlled and clean cut. In Japan, Gyutoh means a butcher knife; in Europe, Gyutoh is commonly used as an especially sharp chef's knife. SPECIAL FEATURES: The blade—consisting of 49 layers of the highest quality steel—meets the highest demands on stability and edge retention. The Friodur ice-hardened blade provides extreme hardness (approx. 61 HRC) and durability. The triple-riveted, curved handle provides perfect balance, high comfort, and fatigue-free cutting with all post-narrow cutting techniques.
