With the extra-sharp Gyutoh knife from MIYABI, you can slice all kinds of food, from herbs to meat. This sharpness also makes it possible to cut meat or fish into very thin slices. The Gyutoh knife, with its 20 cm blade, is also visually appealing. It is made from exceptionally high-quality materials and undergoes a further refinement process that enhances its quality. The core of the Gyutoh knife is made of MC66 powder steel. It is encased in a total of 132 layers of Damascus steel. This construction gives it a delicate floral pattern, which is why this blade design is called Flower Damascus. This pattern is unique to each knife. MIYABI knives also undergo a special ice-hardening process at -196°C. This process gives them a hardness of approximately 66 HRC. The double-beveled blade has a Japanese blade profile and a Honbazuke finish. The handle, crafted from black ash wood, is just as beautiful as the blade.
